Tailgating Recipes: New Orleans Ugly Dog Saloon BBQ Chili Beans
From Denny: Check out this recipe to make bean style chili for a huge crowd - just perfect for tailgating during football season - and affordable.
If you want you can always add meat for a heartier version but this recipe is all about the spices and vegetarian since the majority of their menu is meat.
This recipe comes from the amusing folks in New Orleans at the Ugly Dog Saloon in the Warehouse District, a few blocks from the Convention Center (401 Andrew Higgins Blvd, New Orleans, Louisiana). Be sure to pay them a visit when you visit the Crescent City!
This is a recipe meant for a crowd as it makes 5 gallons, using commercial-sized cans of beans and tomatoes and seasoning blends available to restaurants.
Here in Louisiana and in Texas many local grocery stores stock the commercial sizes for tailgaters. You can search online or just substitute your own favorite seasoning blends to adjust to your taste. After all, that's what Louisiana cooking is all about, making a recipe your own.
These funny guys at the Ugly Dog Saloon serve up their chili beans in a mug with a side dish of their favorite motto: "It's good to be ugly."

Ugly Dog Saloon BBQ Chili Beans
Makes: 5 gallons
1 cup "Sassy Jones" brand rib rub
1/2 cup "Sassy Jones" brand onion pepper
1/2 cup chili powder
1-1/2 cups ground cumin
1 cup "Southern Pride" brand rib seasoning
2 cups water
3 #10 cans red kidney beans
2 #10 cans diced tomatoes
Mix together and heat well to combine flavors. Before serving, top with sour cream, diced onions and cheddar cheese.
For serving: sour cream, diced onions, shredded cheddar cheese.

Ugly Dog Saloon's Coleslaw Dressing
Makes: for 2 - 3 servings
1/4 mayonnaise (the real stuff, not low-fat)
1 garlic pepper seasoning (Lawry's is one)
3/4 garlic powder
1 black pepper
2 soy sauce
1 tablespoon molasses
1 teaspoon molasses
3 red cabbage very coarsely chopped (or both) or 3 cups green cabbage (or both)
In small bowl, blend all ingredients, except the cabbage; whisk to combine thoroughly.
Chop cabbage into 3/4 to 1 inch chunks (authentic Ugly Dog Style!).
Combine with dressing. Serve immediately or chill for an hour.
