Mardi Gras: New Orleans West Bank Chicken Wings


From Denny:  When I think of Mardi Gras the first images that come to mind are all the wonderful parties and delicious food.  Of course, I do - it's Louisiana!   

One thing is for sure we are all often short on time to prepare our favorites dishes so I've decided to post onto this blog my favorite recipes from the Zatarain site.  

They are a New Orleans based company that provides products to short cut the Cajun cooking process from slow food to a more efficient use of our time.  I prefer to cook "from scratch" most of the time but there are those times when we all turn to a faster way to prepare our favorite dishes...

We all love wings.  Some of the best wings I've had lately are from our national chain grocery store:  Albertson's!  They do a good job of catering to the local food tastes here in Baton Rouge.

When I have to time to cook I go check out various sites like Zatarain's for interesting recipes.  Over the years I've moved in and out of Louisiana and found their products a nice reminder of home when I can't find what I need to make my recipes while living out of state or out of the country.  If you have visited Louisiana and want to make some memorable recipes from your trip then this food company's products may be of help.  (I have found Tabasco hot sauce as far away as Austria, offered in small local restaurants. Who knew of Louisiana's influence?)

As far as I know there is no blogger affiliate program with Zatarain's so I don't profit from mentioning them.  I just happen to enjoy their products and love to promote Louisiana food.  But hey! If they want to hire me that's OK too.  :)

The end game here in Louisiana is we look for excuses to throw a party!  Proclaim your funny excuse for celebrating and make some yummy wings like this recipe.



West Bank Wings

Makes: 10 appetizer servings

Ingredients:

3 lbs. chicken wing pieces
1 tbl. vegetable oil
1/2 cup pineapple juice
1/4 cup cane syrup or molasses
1/4 cup Creole mustard
1/4 cup sweet chili sauce
1 tbl. minced fresh garlic
3/4 tsp. crushed red pepper
1/2 tsp. ground ginger
Chopped fresh cilantro
Sesame seeds

Directions:

1. Preheat oven to 450 degrees. Toss chicken wings with oil and Creole seasoning in large bowl. Arrange wings in single layer on foil-lined large, shallow baking pan.

2. Bake 35 minutes or until wings are cooked through and skin is crisp.

3. Mix remaining ingredients, except cilantro and sesame seeds, in large skillet. Bring to boil on high heat. Reduce heat to low; simmer about 15 minutes or until sauce is reduced by a third and is a syrup consistency. Add wings; toss to coat with sauce. Transfer wings to serving platter. Garnish with cilantro and sesame seeds. Serve immediately.
