Holiday Recipe: Ashleys Overnight Breakfast Casserole

From Denny:  The hectic holidays are almost upon us and it sure comes in handy to have a few easy dishes like this to bake when people gather for any reason from the holidays to Saturday night football!  Breakfast casseroles come in handy when you have a house full of family and you need something you can just pop into the oven while you make coffee and slice some fruit.

This casserole comes from Dr. Ashley Lucas who was thoughtful enough to give it as a hostess gift to a friend who hosted a football night gathering.  That hostess sure was delighted to find a ready to go breakfast waiting in the refrigerator that all she had to do was bake and serve the next morning.  A great idea as Christmas food gifts too!

Ashley’s Overnight Breakfast Casserole

Serves:  8 

From:  Dr. Ashley Lucas, Baton Rouge, Louisiana - friend of food writer Corinne Cook at The Advocate newspaper.

Ingredients:

1 lb. bulk sausage (brand: Jimmy Dean, “hot” flavor)
1 small onion, chopped
8 large eggs
2 cups half-and-half
1 teaspoon salt
1 teaspoon dry mustard
Pepper to taste
6 slices bread, cubed
1 cup grated cheddar cheese

Directions: 

1. Lightly spray 9-inch x 13-inch baking dish with nonstick coating and set aside.

2. In medium skillet, sauté sausage and onion together until meat is cooked and no longer pink. Drain well.

3. In large mixing bowl, whisk eggs, half-and-half, salt, dry mustard and pepper to taste.

4. Add the cubed bread and cooked sausage. Stir to combine and pour into prepared baking dish. Sprinkle cheese over the top. Cover with foil and refrigerate overnight.  If you gift this casserole be sure to write on an attached card or on the foil: “Take out ½ hour before baking. Bake at 325 F for 45 minutes, uncovered.”

5. Let stand 5 minutes before serving. Serve with fresh fruit of your choice.
