Creole Style Avocado Salad

From Denny:  Want an easy dip that is quick to make in this summer heat?  Who wants to spend time working in a hot kitchen when you can be out by the pool munching, right?

Try this refreshing dip with avocado.  The creamy concoction is made with two mashed avocados, some finely chopped pecans or walnuts - your choice - and lime juice, a little mayonnaise, a little sour cream, white wine,  cayenne pepper, salt and dill for seasoning.

Serve slathered on your favorite toasted bread or with white corn tortilla chips or even fruit.

Creole Avocado Salad

From:  “A Cultural Legacy: Creole Gourmet Secrets of Louisiana” by John la Fleur II

Serves: 6

Ingredients:

2 ripe avocados, mashed

1 tbl. mayonnaise

1 tsp. sour cream

1/2 tsp. dill

1/4 tsp. - 1/2 tsp. salt

1/2 cup white wine

1/2 tsp. cayenne pepper

1 tsp. lime juice

1/2 cup pecans or walnuts, finely chopped

Directions:

1. Mix all ingredients in a bowl until avocados acquire a creamy texture and chill.

2. Serve on your favorite bread, cut in quarters, brushed lightly with melted butter. Serve with fruit or chips of choice.
