Dennys Food and Recipes: Summer Food: Raspberry Almond Cheesecake Tartlets: From Denny:  Do you enjoy cheesecake but want an easier way to make it?  Then this recipe is for you.  I like cheesecake too but find it too large for just two of us to eat and too time consuming to make unless I plan on entertaining a hungry crowd.

A springform pan is an absolute must to make a proper cheesecake - and the patience of a saint to leave the oven door cracked open as it slowly cools down for hours so you can hopefully avoid it cracking straight down the middle like an ugly scar.  Usually, I've been pretty lucky over the years.  Of course, when I wasn't lucky it was evident that a wonderful fruit topping like blueberry or strawberry could hide a multitude of sins just like gravy on a screwed up dinner. :)...

Romancing The Chocolate: Valentines Day: Chocolate Chip Butterscotch Pie: From Denny: Pies are always an easy idea for holidays as they take less time and fuss than individual portion recipes.

This is a light taste of chocolate and butterscotch. If you want to intensify those flavors, step up the chocolate chips to 3/4 cup, instead of 1/2 cup. You could even drizzle the finished chilled pie with extra chocolate syrup to add that decadence factor.

As to intensifying the butterscotch flavor, why not add a few microwave melted caramel candies to the mix? Or you could add more butterscotch chips instead of taking the time to melt caramels.

Most people prefer a light taste to dishes. At our house we often like spicy dishes and strongly flavored desserts. So, if it's supposed to taste like chocolate and caramel, we want it to be obvious.

I really think this cook was showcasing the mascarpone cheese above the other flavors, so a different name would have been a better idea since the chocolate and butterscotch flavors tend to be background in this pie. The choice is yours: simple and creamy cheese with a light taste of chocolate and butterscotch - or kick it up a notch to just a bit more!

Romancing The Chocolate: Easy Triple Layer Mud Pie: From Denny: This is an easy recipe for those chocolate lovers who are in a hurry to whip up a dessert and then forget about it for a few hours while it chills in the fridge.

Simple pies like this are also perfect for tailgating to those special sports events.

All you need for this simple dessert is part of a can of sweetened condensed milk, 3 squares of semi-sweet chocolate, a prepared chocolate cookie crumb pie crust, a chocolate instant pudding mix, some two percent milk, 1/2 cup chopped nuts and a small tub of frozen whipped topping of your choice.

Romancing The Chocolate: Awesome Chocolate Pecan Tart: From Denny: This easy tart combines two of my favorite flavors - chocolate and pecans. Louisiana Bergeron pecans are wonderful if you can get them where you live. If not, just look for the freshest ones, even asking your grocer when a new shipment is due.

Pecans exude such a wonderful aroma when roasting in the oven that is hard to resist. Make sure you slightly warm the dessert when you serve it for the holidays. That's how we like it at our house! :)

It's definitely one of my favorite desserts, especially in the heat of the summer. The tartness really cools you off. FYI, any tart food cools down your liver, which, in turn, cools off your body in hot weather. So, think apples, limes, grapefruit and blackberries if you want to cool off the healthy way.

Florida is known for their key lime pie and there are fans of it all over the country now. The real secret to making this simple and easy famous pie is to purchase real key limes for the recipe. Key limes are very small, very tart and thin-skinned. When ripe they turn from green to yellow.

Most limes in our American grocery stores are those large beautiful, neon green and thicker-skinned Persian limes. Persian limes are also much less tart so they don't deliver that full flavor to the pie cooks, and tasters alike, desire.

How simple is this pie recipe? Really simple: 100 percent key lime juice, sweetened condensed milk and a good graham cracker crust with a little melted butter, brown sugar and chopped nuts. At our house we make the chocolate graham cracker crust while others choose to use traditional pastry crust. It's your preference."

Recipe: Real Man's Cajun Quiche

From Denny: This is a delightful meaty version of how a Cajun would make one of those prissy French quiches. Lots of sausage, hot peppers and cheese, a winner! (no photo from the site)

A quiche is so easy to make and bake and can feed a whole family with a salad on the side too. Great way to use up those little bits of leftovers like meat and veggies. I often have some leftover sauteed red or green bell peppers that I like to include on my omelets or quiches. A little warmed salsa would be a nice finish with this too, complimenting the egg and cheese flavors. Don't forget your hot Tabasco sauce to put on your eggs, Cajun style! :)

Hands on time: 15 minutes
Total time: 1 hour
Serves: 6

Ingredients:

1 store-bought or homemade pie crust

1 tablespoon butter

1/2 medium onion, chopped

1/2 pound precooked andouille sausage, sliced 1/4-inch thick

4 ounces pepper jack cheese, grated (about 1 cup)

4 ounces cream cheese, cubed

5 eggs

3 ounces ( 3/8 cup) milk

1 jalapeno pepper, seeded and sliced into rings

Instructions:

Preheat oven to 350 degrees. Line pie pan with crust, crimp edges, prick with fork and prebake for 10 minutes.

Heat butter in small frying pan and saute onion until translucent. Scatter half of sausage over pie crust, sprinkle with half of onions, 1/3 of pepper jack cheese and half of cubed cream cheese.

Repeat order with remaining sausage and onions, another 1/3 of pepper jack cheese and remaining cream cheese. In medium bowl, whisk together eggs and milk. Pour over filling. Top with remaining 1/3 of pepper jack cheese and jalapeno slices. Bake for 45 minutes or until quiche is set and top is golden brown.

Nutrition:

Per serving: 484 calories (percent of calories from fat, 71), 18 grams protein, 14 grams carbohydrates, 1 gram fiber, 38 grams fat (17 grams saturated), 228 milligrams cholesterol, 701 milligrams sodium.
