Dennys Food and Recipes: Thanksgiving: Layered Pumpkin Cheesecake

Dennys Food and Recipes: Thanksgiving: Layered Pumpkin Cheesecake: From Denny:  This is the perfect holiday table dessert!  It's so showy it's sure to impress.  Three layers of tasty goodness are the gingersnap cookie crust as it's sturdy foundation to hold the spiced pumpkin cheese layer that is marbled with a vanilla layer.

Like most big cheesecakes, this one should be baked in a springform pan, where the cake cools in the pan for several hours before you remove the sides of the pan.  If you have never used a springform pan, it's so easy it will make you laugh, definitely nothing to be intimidated about at all.

Like any tasty cheesecake, this one is rich in calories too, so a small serving would be welcomed by most.  At a dinner party I like to cut a normal to small sized slice, placing it on one plate and then encourage couples to share so people don't have to feel guilty about busting their diet plan.  After all, the whole point of entertaining is for people to enjoy their tasty treats!...

Chef Recipe: Crawfish Creole and Pepper-Jack Cheese Grits

Food video included. From Denny:  This Mardi Gras photo of a woman costumed as a singing and accordion playing crawfish was too funny to pass up!  Food photos of cheese grits and crawfish creole are a dime a dozen but this carnival season photo was priceless and sure gave me a grin.

I started this blog as a way to preserve local recipes sent in by readers of the Baton Rouge newspaper.  Why?  Three reasons:  1) five years later and the newspaper still has a really crappy search engine that makes it too difficult to find what you want.  2) the paper starting charging fees for any recipes over a month old - and they don't even own the copyright to those recipes!  3) for years, as the economy went up and down - our house was moving in and out of Louisiana and we sure missed the style of cooking.  It's amazing how when you move out of an area you start to forget the little things like technique or where to shop for that special ingredient that make a recipe taste good.

This food blog was for personal use initially but then decided to open it up for the public too.  It's a lot more popular than I ever expected!  Thank you for your continued support all these years!

Oh, yeah, and on to the chef recipe...  This a WBRZ Chef of the Month recipe from the Le Creole restaurant in Baton Rouge, Louisiana.  Before I visit any area I like to go online and check out the local restaurant menus.  I even do it here locally!  Here's the dinner menu and the lunch menu.  

Gives you some serious inspiration for your own home cooking, doesn't it? Now check out this easy to make recipe of Crawfish Creole and Pepper-Jack Cheese Grits.  You can always substitute shrimp or even a tasty firm fish if you cannot get crawfish in your area or the budget does not allow for crawfish.  

This recipe might be nice with calamari if you can get it fresh and already cleaned.  Read a news story a few months ago about how off the coast of California they were inundated with schools of calamari.  Sure makes you think about moving out that way for some good eating!

From Denny:  Roasted my Thanksgiving turkey a day early.  Sure beats stressing on the Big Day.  Also, my husband, affectionately known as "Satan" misses out on trying to micro-manage the cooking, driving me absolutely crazy.  He never did learn to cook but thinks he knows how to tell you all about how to do it anyway.  Getting the Big Bird done a day early is a win-win for everyone as he was less stressed just as much as me!

Though he did try only twice this season to be ever so irritating:  once, when taste testing the fabulous gravy he made The Yuck! Face but could not keep his composure for long, laughed, and then raved about it as one of the best yet.  Later he decided he just had to tell me how to cut the French bread for sandwiches his way rather than the normal slices I was doing for hot garlic bread, his favorite.  Since I'm basically The Spatial Engineer in this house (just ask me to pack a car for travel and I am The Expert on finding every nook and cranny to fill) I explained to him how his way made no sense but cut a few slices for him anyway.  He was so disappointed to realize I was right after all.  "Satan" lost that round.  Never a dull moment at our house, that's for sure!

Hey, we should all be challenging the White House chef to a Roast Turkey Cook Off.  Bet mine is one of  The Best!  We love spices at our house and every year I create something different.  This year's wet rub spices were swimming in clarified butter:  sea salt, black pepper, garlic powder, smokey paprika, cumin, curry powder, marjoram leaves, lite sodium soy sauce, Moscato wine and Remy Martin cognac...

From Denny:  Ready for yet another chef inspired version of the classic BBQ Shrimp idea?  This one comes from Baton Rouge, Louisiana, at the Kingfish (named after Kingfish Sen. Huey Long who was definitely larger than life).
In Louisiana we love an excuse to use in any dish we can our incredible sweet potatoes grown here.  This is the first time I've seen sweet potatoes used in a BBQ Shrimp recipe!  This chef uses his sweet potatoes to create his version of a "BBQ" sauce poured over the shrimp on top of the waffle...

New Orleans Chef Holiday Appetizer: Bacon-Wrapped Shrimp with Rosemary and Stilton




From Denny:  This is an upscale version of the classic shrimp rolled in bacon appetizer.  New Orleans Chef Anthony Spizale of The Rib Room - in the heart of the French Quarter - has definitely kicked up the taste levels on this recipe.

This tasty version is rich with the spectacular Stilton butter coating all over the shrimp just as you finish cooking it.  Then, to gild the lily, there is the Port Wine reduction sauce for dipping.  Definitely a "wow!" recipe sure to impress during the holiday season or for that special dinner.

Romancing The Chocolate: Christmas Gift Recipe: Peanut Butter Fudge: From Denny:  This is an easy unique way to cook fudge - in a slow cooker!  What fun, a super simple fast recipe!  It has our name all over it and think how you can make up many batches of this to give as hostess gifts at Christmas parties or other seasonal gift giving.

It's also a kid friendly recipe it's so easy to do.  You cook the fudge on High in the slow cooker for about 20 minutes total and then pour it out into a pan lined with waxed paper.  Place in fridge to cool and harden.

Dennys Food and Recipes: Chef Recipe: Simple Tasty Coleslaw For Your BBQ: From Denny:  Looking for a new coleslaw recipe to impress the family and friends at your next barbecue?  This one is tasty as it includes both red and green cabbage which play off each other well both for color and taste.  The red cabbage is not as bitter as the green.  Carrots, red and yellow bell peppers help to sweeten the cabbage along with the mayonnaise.  The 1/4 cup sugar used looks like a lot but not in relationship to the 16 cups of cabbage.

Spices?  Lots of fresh herbs like Italian flat parsley, thyme, cilantro and basil.  Dry spices added are small amounts of cayenne pepper and cumin.  If you want to kick it up another notch to the salad dressing you could add some garlic powder and smokey paprika to your taste.

Romancing The Chocolate: Awesome Chocolate Pecan Tart: From Denny: This easy tart combines two of my favorite flavors - chocolate and pecans. Louisiana Bergeron pecans are wonderful if you can get them where you live. If not, just look for the freshest ones, even asking your grocer when a new shipment is due.

Pecans exude such a wonderful aroma when roasting in the oven that is hard to resist. Make sure you slightly warm the dessert when you serve it for the holidays. That's how we like it at our house! :)

Dennys Food and Recipes: Easy and Simple: How To Make The Best Key Lime Pie: "From Denny: Making your own key lime pie is so simple - and rewarding! It's definitely one of my favorite desserts, especially in the heat of the summer. The tartness really cools you off. FYI, any tart food cools down your liver, which, in turn, cools off your body in hot weather. So, think apples, limes, grapefruit and blackberries if you want to cool off the healthy way.

Florida is known for their key lime pie and there are fans of it all over the country now. The real secret to making this simple and easy famous pie is to purchase real key limes for the recipe. Key limes are very small, very tart and thin-skinned. When ripe they turn from green to yellow.

Most limes in our American grocery stores are those large beautiful, neon green and thicker-skinned Persian limes. Persian limes are also much less tart so they don't deliver that full flavor to the pie cooks, and tasters alike, desire.

How simple is this pie recipe? Really simple: 100 percent key lime juice, sweetened condensed milk and a good graham cracker crust with a little melted butter, brown sugar and chopped nuts. At our house we make the chocolate graham cracker crust while others choose to use traditional pastry crust. It's your preference."

Chili Cook Off: 3 Recipes From The Today Show

3 awesome takes on chili recipes from cold weather comfort food to inventive and heart healthy.



From Denny: The Today Show put out the call to all its viewers, asking cooks to compete in a chili cook off. Hundreds of recipes were sent in. Can you imagine testing and tasting all of these chili recipes and trying to narrow it down to just three? That must have been a tough call.

The three finalists they chose really all deserve the prize. Each one is unique and each recipe is quite tasty. It just comes down to personal taste of you and your family. The third recipe is also a healthy chili recipe, using chicken and turkey and spices that are excellent digestives. A digestive sauce or spice helps your metabolism burn the calories faster and more efficient.

Looking at the recipes I'd say the first one, Hog Call Chili, would be especially good in the fall or spring seasons. I like the inventive combinations of unusual ingredients.

Michael's Chili is a heart healthy chili and would be fabulous to enjoy in the hotter summer weather since it is so much lighter than traditional chili, layered with subtle interesting flavors because of the oyster sauce addition. Michael makes it easy to enjoy chili even in the summer months!

The Texas chili recipe, Bayou City Chili, is perfect for a hearty cold winter dish, the ultimate comfort food during this crazy severe snow weather engulfing the nation this season.

The Texas chili, Bayou City Chili, took the top prize from judges Food Network host Sunny Anderson and Travel Channel author Adam Richman.

To be sure, I will be making all three recipes as they are all outstanding. Kudos to all the people who entered this contest. Now I want to know "But who were the runners up?" Bet those are some serious taste treats too. Hey, Today Show, quit holding out on us here in food virtual land! ")

Las Vegas American Fish Restaurant: Caesar Salad

Check out this awesome version of the famous salad by renowned famous Chef Michael Mina.




From Denny: Caesar Salad is considered one of our favorite comfort foods here in Louisiana. Apparently, at the American Fish Restaurant at the Aria Hotel in Las Vegas, Nevada, well, they feel the same way. We eat this delicious salad all year long, absolutely loving it. Of course, what is comfort food but usually a dish with loads of calories, fat and incredible flavors? Yes, this Caesar Salad boasts all three levels, coming in at 534 calories per serving. Look on the bright side: You also get nine grams of protein with the fat and flavor! :)

Fans of this restaurant tout how this Caesar Salad features lovely white anchovies, called boquerones, and the most perfect garlicky Caesar dressing. The medley of harmonious flavors and textures create a symphony in your mouth. The boquerones are a Spanish product, pickled in vinegar, usually found in specialty grocery stores.

American Fish's Caesar Salad

From: Chef Michael Mina at American Fish Restaurant, Las Vegas, Nevada

Total time: 1 hour

Servings: 4

Note:  This recipe gives you oil-cured olives as they are easy to find. The most authentic version of this salad?  The restaurant uses dried black olives.  They dry the olives in a slow oven of 225-degrees F., using Taggiasca or Kalamata olives. The olives dry in the slow oven for 6 to 8 hours, where the amount of time required depends upon the size of the olives you are using.  Then they are chopped.


Lemon vinaigrette

2 teaspoons lemon juice

2 teaspoons olive oil

Salt and pepper


Directions: In a small bowl, whisk together the lemon juice and olive oil. Season to taste with salt and pepper. Cover and refrigerate until needed.




Caesar dressing

Ingredients:

2 egg yolks

Juice from 1 lemon

1 cup olive oil

1 cup canola oil

1 tablespoon chopped capers

1 teaspoon Worcestershire sauce

1 clove garlic

3 salted anchovy fillets, rinsed

1/2 cup grated Parmesan cheese

Salt and pepper


Directions:

1. In a large bowl, whisk the egg yolks together with the lemon. Slowly whisk in the oils, 1 teaspoon at a time, constantly whisking until the oil is emulsified to make a mayonnaise. This makes about 2 cups mayonnaise.

2. Using a mortar and pestle, or chopping and crushing with the side of a knife, combine the capers, Worcestershire sauce, garlic and anchovy fillets to form a paste.

3. Stir the purée into the mayonnaise until thoroughly combined, then stir in the Parmesan cheese. Season to taste with salt and pepper. This makes about 2 cups dressing, more than is needed for the remainder of the recipe; the remaining dressing will keep for 2 to 3 days, covered and refrigerated.




Fried capers

Ingredients:

Oil for frying

1 tablespoon drained capers

Salt

Directions: In a small saucepan, heat 1 to 2 inches of oil until a thermometer inserted reads 350 degrees. Add the capers and fry for 30 seconds. Drain on a paper towel, then season to taste with salt.




Croutons

Ingredients:

16 slices French baguette, very thinly sliced on the bias

Olive oil

Salt and pepper

Directions: Heat the oven to 350 degrees. Brush the baguette slices with the oil, then lightly sprinkle over salt and pepper. Place the slices on a baking sheet and toast until crisp and golden, about 4 minutes.



Salad and assembly

4 heads Little Gem lettuce - or 4 hearts of romaine lettuce


Lemon vinaigrette

Ingredients:

1 tablespoon chopped parsley

1/2 cup Caesar dressing, more as desired

Croutons

16 lemon segments, from 2 lemons sliced into 8 wedges each

8 white anchovy fillets (boquerones), halved crosswise

1 1/2 tablespoons chopped oil-cured black olives

Fried capers

2 tablespoons grated Parmesan cheese


Directions:

1. Quarter each head of lettuce lengthwise, and toss the wedges with the lemon vinaigrette and chopped parsley.

2. On each of 4 plates, spoon over a light base of Caesar dressing, then top the dressing on each plate with 4 lettuce quarters.

3. Garnish each wedge with a crouton and lemon wedge, and top each crouton with half of an anchovy fillet. Sprinkle over the chopped black olives, fried capers and Parmesan cheese evenly over the 4 servings. Serve immediately.

Each serving: 534 calories; 9 grams protein; 17 grams carbohydrates; 2 grams fiber; 48 grams fat; 7 grams saturated fat; 40 mg. cholesterol; 1 gram sugar; 718 mg. sodium.

Denver Rackhouse Pub: Beer Baked Mac N Cheese

Several creamy cheeses and wonderful beer combine for a slice of comfort food heaven.




From Denny:  Check it out! Yet another stellar mac 'n' cheese recipe to enjoy. Does Life get any better? The perfect weekend food, the perfect crowd pleaser, the perfect recipe for the cold weather and all this crazy snow we have been finding all across the nation this winter.  What a pleasant way to warm up! :)

This recipe is real magic. Snuggled warm inside this dish are no less than five kinds of wonderful cheeses. The rich base gets a lift from amber ale. It bakes with a blanket of light panko crumbs for some crunch. Parmesan cheese spreads out on top too to give a rich, golden perfection.

Beer-Baked Mac 'N' Cheese

From: Rackhouse Pub in Denver, Colorado

Total time: 1 1/2 hours

Servings: 12 to 16


Ingredients:

1 cup (2 sticks) butter

1/2 cup flour

1/2 cup amber beer

2 cups half and half

1/2 pound Brie

16 ounces (2 packages) cream cheese

1 1/2 cups crumbled Gorgonzola cheese

2 1/2 cups shredded cheddar cheese

1 1/2 cups grated Parmesan cheese, divided

1 (16-ounce) box penne pasta, cooked and drained

Salt and pepper

1/2 cup panko or bread crumbs


Directions:

1. Heat the oven to 350 degrees.

2. In a medium, heavy-bottom pot, melt the butter over medium heat. Whisk in the flour to form a light roux. Slowly whisk in the beer and half and half.

3. Add the Brie and cream cheese to the sauce, stirring until the cheeses are melted and incorporated. Stir in the Gorgonzola, cheddar and 1 cup Parmesan cheese.

4. Stir in the pasta, taste and adjust the seasonings as desired with salt and pepper (some of the cheese will be salty and the mixture may need only a little salt, if any).

5. Pour the mixture into a 13-by-9-inch baking dish. Top the mixture by sprinkling over the remaining Parmesan cheese and panko crumbs. Place the dish in the oven and bake until the sauce is bubbly and the toppings are crisp and golden, about 1 hour.

6. Cool slightly before serving.

Each serving: 566 calories; 20 grams protein; 29 grams carbohydrates; 1 gram fiber; 41 grams fat; 25 grams saturated fat; 123 mg. cholesterol; 2 grams sugar; 611 mg. sodium.

From Denny:   The year just marches on, doesn't it?  This is a roundup of the past three weeks of various posts.  Oh, how I wish I had the time to write more science posts as I do enjoy being curious about my world.  If it were not for the tense political times requiring constant attention I'd be off writing about art, science, poetry, lots of food,  photography and total humor.

With all the tough economic times it seems like we all have to stay on top of our politicians to get the very best from them.  These days with so much in flux economically, politically, rogue countries struggling to become nuclear states and the last gasps of terrorist organizations still rearing their ugly little heads, I'm focused on writing mostly news.  Like you, I long for a time when Life is easier and a lot more enjoyable.  Those times will come again.  Try to be patient.  And while you are being patient, keep your foot in the backs of your politicians, making them crystal clear aware of what you voted for is what you expect to be delivered.  Game on! :)
