Dennys Food and Recipes: Labor Day, Football Tailgating: Check Out Some New Drinks, Appetizer Cheesy Zucchini No-Fry Fries with Smoked Paprika Dip Sauce

Dennys Food and Recipes: Labor Day, Football Tailgating: Check Out Some New Drinks, Appetizer Cheesy Zucchini No-Fry Fries with Smoked Paprika Dip Sauce: From Denny:  Ready to try something new for the Labor Day weekend and tailgating season?  Audition it on Labor Day and check out your reviews, and, if all goes well, you have some winners for the tailgating season.  I know.  I know.  The conventional wisdom is that you are not supposed to audition something new on your guests but my crowd likes to review.  Come on; put a little risk into your life!

I usually cook up standards I know most people enjoy and then introduce a couple of new things for review and comment.  It's a conversation starter and since my friends tend to be as opinionated as myself, well, they enjoy weighing in.  They even make suggestions to kick it up, tone it down or variations that I might not have considered.  Since I value their input it's all done in good fun.  For my guests to take home I also make copies of the new recipes with space for them to make notes while we discuss the food.

The first two drinks up for consideration are old standards with new twists:  a Planter's Punch and a Bloody Mary.  The new twist for the Planter's Punch is that it has some added Camus Cognac with the apple cider, apple juice and pineapple juice.  The new twist for the Bloody Mary is the addition of Lucid Absinthe with the spicy bloody mary mix, worchestershire sauce, horseradish, black pepper, celery salt and garlic salt.  These two drinks come from  Niccole Trzaska at The Liberty Bar in New York City.

This appetizer recipe is from Chef Sara Moulton, one of the busiest TV chefs.  Check out this link to her site for online cooking classes, links to her TV shows and awesome easy recipes.  Sara has enjoyed a long career:  a 25-year stint at Gourmet magazine (which had a run from 1941 - 2009), hosted several Food Network shows for a decade, hosts public TV's "Sara's Weeknight Meals" and has written three cookbooks, one of which is "Sara Moulton's Everyday Family Dinners."  Whew! All while raising her own family.  It's no wonder she specializes in quick and easy food...

Dennys Food and Recipes: BBQ Grilling: 3 Tasty Compound Butters To Compliment Your Recipes: From Denny:  Whether you are grilling or baking in the oven specially infused butters offer wonderful flavor choices to celebrate your food!  Chef Sara Moulton is known for easy recipes that can be done at home with a minimum of fuss.  She's also one of my favorite food teachers as she is so relaxed, giving even the novice cook a boost of confidence.

Her first recipe is for an herb butter.  Do you have some favorite herbs that you just can't cook without?  This recipe is all about your favorite combination of herbs, though she does suggest a few to get you started.  While you could substitute a Vidalia sweet onion in place of shallots, well, shallots are that much sweeter, and, oh, so wonderfully flavorful so try to find them in your area.  Shallots, a favorite of classically trained chefs, are usually in plentiful supply in the spring and summer months, often into autumn.

Are you more in the mood for a citrus butter?  Chef Moulton combines the zest and juice of lemons and limes for a sublime summer taste that everyone will enjoy.

How about something more substantial for those manly men who enjoy a great grilled steak?  Oh, this recipe is for you!  Combine this steak butter with Dijon mustard, a fresh finely minced garlic clove and Worchestershire sauce (we prefer Lea & Perrins at our house though you could use the brand you like),

If you can't grill outside just use a grill pan on the stovetop to get those prized grill marks, turn it over and place it in the oven to finish.  When ready to plate make sure the steak plate has been heating in the oven. Place a large slice of this steak butter onto the plate and then place the steak on top of the butter.  Talk about awesome taste as the butter melts on the very hot plate, spilling out like a gravy for your steak!  That's the method all the old steakhouses of the 1940's and 1950's used before restaurants went to open charcoal or wood fired grilling.

The beauty of all these butters is that all you have to do is roll them into logs and wrap in plastic wrap and aluminum foil and freeze until ready to use.  Just slice off the amount you need and return it to the freezer.  How simple is that?  You can make these up way ahead of when you will need them...

New Orleans Chef Recipe: Tasty Fig Gelato

From Denny:  At the Hotel Monteleone’s Criollo Restaurant in the French Quarter this is a seasonal featured dessert, served with slivered almonds, caramelized sugar and lovingly garnished with summer's fresh blackberries.  Figs are hanging off back yard Louisiana trees this month and people are always looking for new recipes utilizing figs.  The Criollo also serves a killer banana split:  small scoops of Pontchtoula (Louisiana grown) strawberry, stone-ground chocolate and fig gelato snuggled up with long slices of banana in sauce, all served in an almond "boat."

The restaurant was willing to seat a couple of food journalists who wandered in just for dessert - and did so graciously.  The chef was also willing to share his recipe!  So, if you are traveling to New Orleans any time soon and fancy a frozen treat to beat the summer heat, just saunter on in to the Hotel Monteleone!  People with this great an attitude deserve a Denny Lyon Bump!  (Stephen Colbert has nothing on me.)  :)

Chef Recipe: Crawfish Creole and Pepper-Jack Cheese Grits

Food video included. From Denny:  This Mardi Gras photo of a woman costumed as a singing and accordion playing crawfish was too funny to pass up!  Food photos of cheese grits and crawfish creole are a dime a dozen but this carnival season photo was priceless and sure gave me a grin.

I started this blog as a way to preserve local recipes sent in by readers of the Baton Rouge newspaper.  Why?  Three reasons:  1) five years later and the newspaper still has a really crappy search engine that makes it too difficult to find what you want.  2) the paper starting charging fees for any recipes over a month old - and they don't even own the copyright to those recipes!  3) for years, as the economy went up and down - our house was moving in and out of Louisiana and we sure missed the style of cooking.  It's amazing how when you move out of an area you start to forget the little things like technique or where to shop for that special ingredient that make a recipe taste good.

This food blog was for personal use initially but then decided to open it up for the public too.  It's a lot more popular than I ever expected!  Thank you for your continued support all these years!

Gives you some serious inspiration for your own home cooking, doesn't it? Now check out this easy to make recipe of Crawfish Creole and Pepper-Jack Cheese Grits.  You can always substitute shrimp or even a tasty firm fish if you cannot get crawfish in your area or the budget does not allow for crawfish.  

This recipe might be nice with calamari if you can get it fresh and already cleaned.  Read a news story a few months ago about how off the coast of California they were inundated with schools of calamari.  Sure makes you think about moving out that way for some good eating!

From Denny:  Ready for yet another chef inspired version of the classic BBQ Shrimp idea?  This one comes from Baton Rouge, Louisiana, at the Kingfish (named after Kingfish Sen. Huey Long who was definitely larger than life).
In Louisiana we love an excuse to use in any dish we can our incredible sweet potatoes grown here.  This is the first time I've seen sweet potatoes used in a BBQ Shrimp recipe!  This chef uses his sweet potatoes to create his version of a "BBQ" sauce poured over the shrimp on top of the waffle...

New Orleans Chef Holiday Appetizer: Bacon-Wrapped Shrimp with Rosemary and Stilton




From Denny:  This is an upscale version of the classic shrimp rolled in bacon appetizer.  New Orleans Chef Anthony Spizale of The Rib Room - in the heart of the French Quarter - has definitely kicked up the taste levels on this recipe.

This tasty version is rich with the spectacular Stilton butter coating all over the shrimp just as you finish cooking it.  Then, to gild the lily, there is the Port Wine reduction sauce for dipping.  Definitely a "wow!" recipe sure to impress during the holiday season or for that special dinner.

Chef Recipe: Louisiana Crawfish or Shrimp Chowder Great For Holidays




From Denny:  Looking for an elegant soup you can pull together quickly but tastes like you worked at it for hours?  This recipe utilizes a couple of canned soups - mushroom and potato - to help speed up the process.  Be sure to purchase the best version of these canned soups that you can find.  A low sodium version would be a good idea as seafood already contains a fair amount of natural sodium.

What also makes this a rich and delectable soup is the cream cheese, butter and half & half cream.  Oh, yeah, this is easily a calorie buster so it's best to serve by the cup as an appetizer.  But hey, if you are feeling lucky try it as a main dish.

I'm no fan of canned mushrooms, especially when you can find them already sliced fresh at the grocery store, packaged up and ready to go.  I prefer to slice whole mushrooms but if you are pressed for time the sliced fresh mushrooms are a great alternative.  If they are available in your area then choose the more flavorful Cremini (baby Portabellos) mushrooms over the white button mushrooms.

If you cannot purchase crawfish in your area then consider adding more shrimp or a local fish you enjoy.  This recipe would be great with a little bit of smoked salmon and plenty of fresh salmon, a little bit of smoked trout and plenty of fresh trout.  If you choose to use a fresh mild fish - and don't want to add a smoked fish - then consider adding some chopped and crisped up bacon to help flavor the soup.

The Creole seasoning used here is to your personal taste, generally about 1/4 to 1/2 teaspoon for the entire recipe.  Do not double the Creole seasoning if you double the recipe as it can get too hot and overpowering for most people.

Another seasoning option is to include a mixture of rosemary, thyme and lavender - a traditional French seasoning used to your personal taste.  Start with 1/2 teaspoon, let the soup base cook a few minutes and then taste.  You may like a 1/4 teaspoon more or just keep the previous level.  Experiment with what you like and enjoy!

New Orleans Chef Recipe: Jambalaya For A Crowd



From Denny:  Need an easy recipe for a crowd during Mardi Gras season?  Chef John Besh of New Orleans paired with Zatarain's to create this faster version of jambalaya using Zatarain's Dirty Rice mix.  In fact, the famous chef has a lot of great recipes on their site.

What makes jambalaya so tasty is the browning of the chicken and andouille sausage, mixing in the veggies like celery and onion, some liquid (some people like to use chicken stock in place of water) and then the rice to cook in all those tasty seasonings and juices.

It's a fabulous one-pot meal that is easy to make and a real crowd pleaser.  Whether you take your time to make jambalaya all "from scratch" or choose this shortcut with the dirty rice mix (rice and seasonings) you will enjoy the result!

Jambalaya is such an easy dish to serve for entertaining, especially the holidays like Mardi Gras, Thanksgiving, Christmas and birthdays.  We make this dish all year round it's that popular.  If you have never cooked jambalaya then give this recipe a try!  If you live outside of Louisiana you can always substitute your favorite pork sausage.  You can find Zatarain's products online to order too, for individuals or restaurant service.

Dennys Food and Recipes: Chef Recipe: Simple Tasty Coleslaw For Your BBQ: From Denny:  Looking for a new coleslaw recipe to impress the family and friends at your next barbecue?  This one is tasty as it includes both red and green cabbage which play off each other well both for color and taste.  The red cabbage is not as bitter as the green.  Carrots, red and yellow bell peppers help to sweeten the cabbage along with the mayonnaise.  The 1/4 cup sugar used looks like a lot but not in relationship to the 16 cups of cabbage.

Spices?  Lots of fresh herbs like Italian flat parsley, thyme, cilantro and basil.  Dry spices added are small amounts of cayenne pepper and cumin.  If you want to kick it up another notch to the salad dressing you could add some garlic powder and smokey paprika to your taste.

Chef Recipe: Crab Calas with Remoulade Sauce


From Denny:  Chef Poppy Tooker is a New Orleans icon, much loved and respected as she is interesting.  She is like a walking trivia foodie encyclopedia and she sure does relish telling the tall tales of Louisiana food and history.

Check out some of her latest trivia offerings and appearances to tantalize your mind as much as your tastebuds:

* Louisiana's Crystal Hot Sauce was used in WWI Army field rations. I'm a bigger fan of Louisiana Hot Sauce.  It's milder than Tabasco and less vinegar.  Goes great on eggs in the morning.

* Camellia red beans are the finest grade of red beans.  Camellia buys up all the Hayward (finest top grade) beans, leaving grades A and B for the rest of the country.  Hayward grade beans are named for the family that founded Camellia in New Orleans back in 1923.  They still own it today.

Can we ever imagine the Monday wash day without Camellia red beans?  Life might never have been the same in New Orleans.  Even Louis Armstrong might not have been known for his endearing signature statement, "Red beans and ricely yours."

Crab Calas with Remoulade Sauce

From: New Orleans Chef Poppy Tooker

Yields 18 calas

Ingredients:

2 cups cooked rice
6 tbsp. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 lb. claw crabmeat
3 green onions, thinly sliced
1 tbsp. hot sauce
2 eggs
Oil for frying

Directions: Mix the rice and dry ingredients together thoroughly. Add the crabmeat and green onions. Add the eggs and hot sauce. Mix thoroughly into a tight batter. Drop by tablespoonfuls into hot oil (360 degrees) and fry until brown. Drain on paper towel. Serve hot with remoulade sauce for dipping.
