Britainy Shaw, 25, of Louisiana (before that she lived in Texas and before that in Montana) decided it was a brilliant idea. She heard of Southern Living magazine's contest and decided to enter just for fun, taking third for this cake recipe.
She said her thoughts immediately went to her favorite Christmas flavors. “For some reason, all I could think of were drinks. I love hot chocolate with peppermint schnapps in it.”
Her cake consists of three layers of buttermilk chocolate cake that is filled with a fudge-mint filling, frosted with peppermint-tinged marshmallow crème frosting.

It all looks so good you want to rush into the kitchen and start baking! :) This cookie recipe is basically a dense brownie with pools of melting chocolate oozing out when you break them open straight out of the hot oven!
There are two cups of chocolate chips and chocolate chunks in this awesome recipe, certainly more than I'm used to baking. It's no wonder you can get your chocolate fix in one small cookie all at once.
If you have the discipline to wait until the cookie cools all those chocolate pools solidify into huge nuggets of gooey goodness. No one ever said these little chocolate gems would last long in your house - or mine!

Romancing The Chocolate: Christmas Gift Recipe: Peanut Butter Fudge: From Denny: This is an easy unique way to cook fudge - in a slow cooker! What fun, a super simple fast recipe! It has our name all over it and think how you can make up many batches of this to give as hostess gifts at Christmas parties or other seasonal gift giving.
It's also a kid friendly recipe it's so easy to do. You cook the fudge on High in the slow cooker for about 20 minutes total and then pour it out into a pan lined with waxed paper. Place in fridge to cool and harden.

From Denny: Looking for an interesting recipe twist to the holiday dinner? Want a modern version of a classic turkey recipe? Whether it's Thanksgiving or Christmas good cooks everywhere like to try a new recipe for the holidays every now and then.
Now matter how much we love tradition there are those times when a new recipe is the hit of the season and the family says, "This one is a winner; make it for next year too!" And that's how many food traditions start.
I'm one of those cooks that likes to compare a pack of recipes against each other to determine which I like best. Sometimes, I'm just searching for a good tweak on what I'm already making for the feast. Other years I'm just so bored making the same ol' thing I have to have a change somewhere in the menu.
This post contains something for everyone! There are 8 different varieties of roast turkey for Thanksgiving or Christmas dinners to make you a hit for the season. There is quite a variety from the brined to basting with citrus-mustard, honey-spice to more ethnic and regionally flavored rubs like Moroccan, Southwestern and Spicy. Not to be left out is the traditional turkey rub for the keepers of holiday tradition. Every few years I go back to basics too after trying out the more exotic versions of roasted turkey.

From Denny: As a way to teach students the election process mock elections occurred across the country last week. Right here in Louisiana, involving 88,600 students across the state from 280 public, private and home schooling, they voted President Obama into a second term. Louisiana broke for Obama by a margin of 51.29 percent to Romney's 48.71 percent.

A Truth Journal: Laugh: Jon Stewart Tells It Like It Is About VP Debate: From Denny: Junkyard dog VP Joe Biden smacked down his snarky Republican opponent, Paul Ryan, in the first few nano seconds of the debate.
Then Biden picked up the dazed talking parrot and slammed him against the barn door for lying every time he opened his mouth with phony statistics and fantasy GOP sponsored "studies." Debate done; Biden won hands down. We were all cheering at our house as this was the best TV we had seen in years.

The best is how Stewart took my fellow journalists to task for some really childish reporting, something I've fussed about for years.

The Social Poets: What Obama and Romney Should Be Talking About: These 2 Sick Little Girls: From Denny: It's time to stop the madness along with the childish political campaign bickering. Americans don't want to hear it anyway. There are bigger issues at stake like the lives of these two seriously ill little girls from Utah, Natalie and Alice Fish. In light of what this one American family is enduring should shame all the national politicians who are so self-absorbed they have not stopped long enough to notice.
I'm so disgusted with the 2012 election's childish name-calling tone and enabling media encouraging it that I change the channel constantly. As a respite yesterday I went up on my page at Google + to catch up on those who friended me.
Well, it turned out these little Fish girls' parents friended me (that's a link to their Google+ page). It's a good thing I always take the time to read a profile page or I might have missed this struggling life drama of a middle class family. These little girls are real troopers and have been living in and out of hospitals since they were born. Their parents are to be commended for going the distance with not just one child but now two with this rare problem.

Dennys Food and Recipes: Chef Recipe: Simple Tasty Coleslaw For Your BBQ: From Denny: Looking for a new coleslaw recipe to impress the family and friends at your next barbecue? This one is tasty as it includes both red and green cabbage which play off each other well both for color and taste. The red cabbage is not as bitter as the green. Carrots, red and yellow bell peppers help to sweeten the cabbage along with the mayonnaise. The 1/4 cup sugar used looks like a lot but not in relationship to the 16 cups of cabbage.
Spices? Lots of fresh herbs like Italian flat parsley, thyme, cilantro and basil. Dry spices added are small amounts of cayenne pepper and cumin. If you want to kick it up another notch to the salad dressing you could add some garlic powder and smokey paprika to your taste.

The Healing Waters: Summer Slow Cooker: Warm Chicken Pita or Lettuce Wrap: From Denny: The beauty of slow food is you can forget about it for awhile after it gets going on the stove. Then you are free to run a few short errands close to the house, go grocery shopping or clean around the house.
Since I'm no fan of long hours of house cleaning like it's a Saturday marathon I clean in short spurts for 10 to 15 minutes several times a day or week, depending upon how long a project takes.
I've even educated my husband how you can load the dishwasher in the amount of time it takes for commercial TV breaks to scream at you around the corner. Fortunately, this year Congress passed a law forcing the advertisers to turn down the volume.

Creole Style Avocado Salad

From Denny: Want an easy dip that is quick to make in this summer heat? Who wants to spend time working in a hot kitchen when you can be out by the pool munching, right?
Try this refreshing dip with avocado. The creamy concoction is made with two mashed avocados, some finely chopped pecans or walnuts - your choice - and lime juice, a little mayonnaise, a little sour cream, white wine, cayenne pepper, salt and dill for seasoning.
Serve slathered on your favorite toasted bread or with white corn tortilla chips or even fruit.

From Denny: Love seafood as much as we do in Louisiana? We also love easy to make casseroles. They are easy to make ahead and easy to take to gatherings. You will be a huge hit with this simple and tasty recipe.
If you want to make a soup, stew, casserole taste good then load it up with seasoning vegetables like celery, onion (a mild one for seafood) and parsley. Of course, what also goes well with seafood is lemon juice and worchestershire sauce with a bit of mustard.
Then it's time for the spice goodies. I usually combine my own spices to make up a version of Cajun seasoning with a lot less salt and more garlic and paprika, adding cumin. Just go easy on the Tony Chachere's Creole seasoning as it tends to have a lot of salt, even the lower salt version. Using a light hand this brand is delightful.
I also like to clarify my butter to either skim off the milk solids that create clogs in your arteries for a light oil or brown those milk solids for a darker browned butter that tastes toasted. It is a heavy oil so you may wish to cut it with a lighter oil like canola for about 40 percent canola to 60 percent clarified butter.
Our local newspaper often prints recipes from readers. We are also not above printing our grandmothers' recipes either as we respect tradition and our culinary foundation and culture. One of the food writers included her grandmother's crab casserole. Check it out.

Gourmet Crawfish Pasta Salad

From Denny: Wonderful fresh greens of arugula and parsley combined with black olives, tomatoes, artichokes, green onions and bell pepper start the base for this tasty pasta salad. If you can't find crawfish tails then substitute shrimp or even a favorite local meaty fish.
Here in Louisiana we like a lot of freshly sliced green onions in our dishes as they pair quite well with sauced seafood. This pasta salad gets dressed up divine with a prepared remoulade sauce that is thinned with a bit of your favorite oil (canola oil or clarified butter at our house) and an added pinch of sugar.
Do be aware that many prepared remoulade sauces have large portions of horseradish in the ingredient ratio. I love horseradish and don't mind the intense mind and sinus-numbing sear but my husband hates it since it burns his mouth. So, be aware some people can't take a lot of horseradish. Make sure to taste any prepared remoulade sauce to make sure your family can handle it.
What can you do to replace a heavily horseradish laced remoulade sauce? Try the idea of making an oil, vinegar and garlic vinaigrette dressing. You can also make a dressing of half vinaigrette and and half light mayonnaise.
We like balsamic vinegar at our house for vinaigrette dressing but for this recipe be sure to use a light vinegar like a rice vinegar. A dark vinegar can cause the vegetables to turn purplish in a cold salad. Do make sure that the vinegar dressing is well emulsified. If it is not it can make the vegetables turn a bit grayish. And, hey, if you happen to have some leftover roasted garlic, wow, does that make a stellar vinaigrette too.
Cold pasta salad often requires a bit of a seasoning adjustment to your personal taste. Once everything is well mixed together see if it could use a touch more salt, cayenne pepper, perhaps some fresh cracked black pepper, maybe even a bit more vinegar or a generous splash of fresh lemon juice.
Just be careful not to be tempted to up the seasoning by pouring on too much dressing that the salad becomes too wet and soupy. The idea is to keep the salad plump and lightly dressed. It just isn't fair to drown a salad of such quality ingredients in too much dressing! :)
