Louisiana Music: Trombone Shorty Version of Musical Gumbo

From Denny: Trombone player Troy Andrews talks about his unique musical style, his background and what it's like in live performances.

On how he plays music: "It's like being at church, you know, when people jumpin' up and get the Holy Ghost and that type of thing. It's that type of connection. You just gotta let your heart and your feelings take over."

On what it's like interacting with the audience: "When the crowd is reacting to everything you do and shoutin' and givin' you that type of energy. The band feeds off of that and we give it right back out. I think we even play harder emotionally. Afterwards, wow, we wonder if that really happened. We feel the energy the rest of the night. Can't even go to sleep until six or seven in the morning because of the excitement the people gave us and we gave it right back out."

Troy says he grew up around music all day long in his New Orleans neighborhood. In the morning there would be a jazz funeral procession passing by his house and in the afternoon another band playing for a birthday celebration. He was surrounded by music. His older brother is a famous trumpet player and started him in music by allowing Troy to learn from the band members in their practices. Troy even toured the world with his brother.

He says he is influenced by hip hop and rock pop and wanted to put it all together into one musical gumbo to see how he can take it to the next level.

How To Make Good Gumbo With Chef John Besh and James Carville

From Denny:  The Big Easy - New Orleans - is where anything can happen because we "Let The Good Times Roll!"  (French: Laissez les bons temps rouler!) Seafood gumbo is the most associated dish with Louisiana and also the easiest to make as demonstrated here by celebrity Chef Besh.

Check out how Chef Besh shows us how to start the all important roux (oil and flour mixed, cooked over medium high heat, constantly stirred until dark brown but not burned).  Then you start cooking the vegetables, starting with the onions first until soft.  Add some celery.  Then you add the crab on their backs along with some stock.

After the roux has had a chance to cook, about 30 minutes or more, to cook out the flour taste, right before you want to serve, then add the raw shrimp and raw oysters.  Those two only take a few minutes to cook and you don't want to over cook them as the shrimp can disintegrate into mush and the oysters will get a rubbery tough consistency.

How To Make Your Own Marmalade

From Denny:  This is an easy tutorial - though without the recipe - for tomato and lemon marmalade. It shows the process. They have even updated the usual sterilizing in a water bath for the jars and lids. The jars and lids get heated in a 250 degree F. oven instead. After placing the cooked marmalade in the jars and sealing, the jars go back into the 250 degree F. oven for another 15 minutes to sterilize and that's all there is to it! That sure is a lot easier and I'm going to try that simpler method.

From Denny: In Pineville, Louisiana, at the Gone Wild Safari and Petting Zoo there is a new 80-pound baby to join the fun. The baby boy was just born here! He isn't yet available for petting, just viewing, but there are plenty of other fun animals to enjoy petting like giraffe, deer, swans, goats and ewwww! snakes.

Dennys Funny Quotes: Funny Mardi Gras Quotes, Who Dat Rocking Saints Songs - Congrats go to the Packers who won this year's Super Bowl! Let the partying begin!

Here is last year's winner, the New Orleans Saints. What a huge surprise it was to win the Super Bowl, the first for this beaten down team. Get a grin at the partying in the French Quarter and the different rock songs for the team.

The Packers have their Cheesehead song and the Saints have their Who Dat?! song. For my second language friends: Who Dat = Who is that?

Right after Hurricane Katrina, all in a half a million strong flurry, half of New Orleans moved to my town of Baton Rouge, the state's capital, overwhelming us and our resources. We soon adjusted after a few months and assimilated everyone. They still can't drive. :)

All we heard in the grocery stores and the shopping malls was the "Who dat?" phrase. We soon started calling New Orleans people The Who Dats and the name stuck with New Orleans wearing it like a badge of pride. :) Winning the Super Bowl was just what New Orleans needed to make them feel really good. There is still a lot of celebrating going on - but then that's the New Orleans Who Dat Nation!

Chili Cook Off: 3 Recipes From The Today Show

3 awesome takes on chili recipes from cold weather comfort food to inventive and heart healthy.



From Denny: The Today Show put out the call to all its viewers, asking cooks to compete in a chili cook off. Hundreds of recipes were sent in. Can you imagine testing and tasting all of these chili recipes and trying to narrow it down to just three? That must have been a tough call.

The three finalists they chose really all deserve the prize. Each one is unique and each recipe is quite tasty. It just comes down to personal taste of you and your family. The third recipe is also a healthy chili recipe, using chicken and turkey and spices that are excellent digestives. A digestive sauce or spice helps your metabolism burn the calories faster and more efficient.

Looking at the recipes I'd say the first one, Hog Call Chili, would be especially good in the fall or spring seasons. I like the inventive combinations of unusual ingredients.

Michael's Chili is a heart healthy chili and would be fabulous to enjoy in the hotter summer weather since it is so much lighter than traditional chili, layered with subtle interesting flavors because of the oyster sauce addition. Michael makes it easy to enjoy chili even in the summer months!

The Texas chili recipe, Bayou City Chili, is perfect for a hearty cold winter dish, the ultimate comfort food during this crazy severe snow weather engulfing the nation this season.

The Texas chili, Bayou City Chili, took the top prize from judges Food Network host Sunny Anderson and Travel Channel author Adam Richman.

To be sure, I will be making all three recipes as they are all outstanding. Kudos to all the people who entered this contest. Now I want to know "But who were the runners up?" Bet those are some serious taste treats too. Hey, Today Show, quit holding out on us here in food virtual land! ")
